Hey Griffin! I totally get it and I had the exact same issue.
For me personally, I kind of just watched online lore videos and started with a 30 minute summary of the universe?
If you want to jump into the universe, I suppose the Horus Heresy is the place to start. This happens 10 thousand years before the events of 40k when the Primarchs (Sons of the Emperor) lead their space marine legions to colonise the very expanse of the entire milky way. Things start to move in motion through the will of entities beyond the warp that are mostly still unknown to the imperium. Word of warning, this series is close to 60 books so my advice is not to try and race through them all. And some books are genuine great works of art and others read like fan fiction.
If you prefer starting with 40k, I began with the Eisenhorn omnibus by Dan Abnett and it features an inquisitor trying to unconver plots against the imperium in a very grimdark "dieselpunk" future. The first book in the series was absolutely entertaining, but so far, the books are little more than just good.
There are also selections of short stories that feature the astra militarum units who are common foot soldiers with a life-expectancy of 15 hours. Survive that, and you are seen as a veteran.
The Carrion Throne trilogy might be my favourite so far and deserves a read on its own. Seriously, it is excellent. But you may need some pre-knowledge regarding why the Emperor is on the golden throne or what a custodes is compared to the super soldier space marines.
Hope this helps!
In general, I think Eisenhorn is a good place to get started.
