Thomas Unitt I’m looking to learn more of this topic. Which books would you reccomend starting out with?

Walt The classic is "The Christian Century in Japan" by C. R. Boxer. It was written a few decades ago, but it provides a good overview (though some of the research has since been superseded). I would look for a used copy, as a new copy is expensive, or borrow it from your library. Other books would be works written by Michael Cooper, a brilliant Jesuit historian who passed only a couple of years ago. Used copies are recommended here as well, or likely a university library.

If you just want a brief intro on religion in Japan, then check out Stephen Turnbull's "The Samurai and the Sacred. " There is one section on Christianity, and you also get overviews on other areas as well.
