I am looking for some good fantasy book recommendations for this weekend's read. It's hard to choose because there are so many books. Can you recommend one that is worth my weekend?

You will need to provide some more information about what kinds of stories you like to get fitting recommendations.
The Changeling SeaChimeras of Estmer
Midnight in Everwood
The Hanging City
The Perilous Gard
All these books are standalones, which is rare in the fantasy genre, and they're all very good. I especially recommend Chimeras of Estmer and The Changeling Sea.
If you like portal fantasy, try The Ten Thousand Doors of January. For an older, more classical style, try The Forgotten Beasts of Eld. Both are standalone.
You may not get it in time for this weekend (there's only a print version I believe), but The Ring of the Dark Elves is a fantasy based on Wagner's Ring operas, which in turn are based on Germanic myths and heroes. JRR would have loved this novel, I think, since that was more or less his expertise as an academic :)

In that case, you'd definitely be better off choosing Chimeras of Estmer. The world-building in the other books I’ve listed isn’t as intricate or interesting.
This world has many different countries, cultures and races, and the relationships between them can be quite complex. My favorite was the Stormy Pirates with their living ships, but there’s also the Kaskalla race, who are similar to elves.
The plot has plenty of unexpected twists and turns, too. The main character is transformed into a cat by his enemy, who also kills his magician teacher beforehand. When he finally confronts his enemy, he turns out to be someone I never expected.
I'll recommend "The Forgotten Beasts of Eld" by Patricia McKillip. Its an older novel but for me it had that same magic of reading Narnia when I was a kid - but a little bit more adult.
That weekend has come and gone, but some favourites for future reference;God Stalk
To Dance With Dragons
The Crow King
Shattered Kingdom
