Every Fourth of July needs a signature dessert, and these strawberry shortcake scones have become one of my favorites.
They combine everything I love about summer: sweet strawberries, buttery scones, clouds of fresh whipped cream, and the simple joy of gathering with family and friends. Unlike traditional drop scones, the dough is shaped into a circle and cut into wedges before baking, creating beautiful bakery-style scones that look festive on a holiday table.
The strawberry topping is what makes them special. Fresh sliced strawberries are gently mixed with sugar, vanilla, and a touch of cinnamon, creating a simple sauce that tastes like summer in a bowl. Paired with homemade whipped cream, these scones become a strawberry shortcake-inspired treat that disappears quickly at every celebration.
Ingredients
For the Scones
* 2 cups all-purpose flour * ⅓ cup sugar * 1 teaspoon baking powder * ¼ teaspoon baking soda * ½ teaspoon salt * 8 tablespoons frozen unsalted butter, grated * ½ cup sour cream or plain Greek yogurt * 1 large egg
For the Strawberry Sauce
* 1 cup fresh strawberries, sliced * 2 tablespoons sugar * 1 teaspoon vanilla extract * Pinch of cinnamon
For the Whipped Cream
* 1 cup heavy whipping cream * 2 tablespoons powdered sugar * 1 teaspoon vanilla extract
Directions
1. Preheat the oven to 400°F (205°C). 2. Line a baking sheet with parchment paper. 3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. 4. Add the grated frozen butter and gently mix until the butter is coated with flour. 5. In a separate bowl, whisk together the yogurt and egg. 6. Add the wet ingredients to the dry ingredients and stir just until a dough forms. 7. Transfer the dough to the prepared baking sheet and gently shape it into a large circle about 1 inch thick. 8. Using a sharp knife, cut the circle into 8 wedges, like a pizza, without separating them. 9. Bake for 17–20 minutes, until lightly golden. 10. Let cool slightly.
Strawberry Sauce
While the scones bake, combine the sliced strawberries, sugar, vanilla, and cinnamon in a bowl. Stir gently and let the berries sit for 15–20 minutes. The strawberries will release their juices and create a naturally sweet sauce.
Whipped Cream
Beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
To Serve
Separate the warm scone wedges. Spoon the strawberry sauce over each scone and finish with a generous dollop of fresh whipped cream.
The red strawberries, white whipped cream, and golden scones make a beautiful addition to any Fourth of July table. It’s the kind of dessert that feels both rustic and celebratory—a simple summer tradition worth sharing year after year.
