In my perspective, William is a good dad. He supported education, learning by experience, believed in Dany's talent and passion. He also treated him well and spend time with him. Moreover, the 'illegal' activity was just stealing some pheasants. He knows his limits.

However, he might make some mistaks. He raised Dany to be an adult. Taking care of himself, feeling responsible in a negative way, and spend time with adult more than children.

Dany is a great kid. However, being involved in all the hunting and illegal activities in this young age might effect him in the future. As the first years of the human's life have a significant effect on us as humans. It is when we start to build our believes. Therefore, Dany might turn into a real criminal, not just a thief who steals pheasants.
