I'm no expert but I do have a couple of suggestions of X-Men runs that I personally really enjoyed. Joss Whedon's run on Astonishing X-Men is probably one of my all time favourite comics, maybe because it got me into comics and Joss Whedon. But it's cool and you should read it if you never have.

Grant Morrison's New X-Men ran for a good number of issues. The early stories are the very best but it's pretty consistently fantastic so I'd recommend that too. I'd say possibly read this before the Wehdon one of you can, then you've got a better sense of the character conflicts that have developed.
