I don't do "healthy" but I'm a master of "quick" I always have a fridge full of leftovers from dinners so making something quick for lunch is easy. I keep tobuli made up in the summer and add cherry tomatoes with toasted whole-grain pita triangles.
Toss a bunch of leftover veggies in a shallow bowl, break two eggs over it, season, add some parmesan cheese, stir and microwave for three minutes; it's a tasty fritata.




Does anyone else have any quick and healthy lunch ideas to share?
