Valerie My new favorite lunch is to fry up a frozen salmon patty (in a bit of olive oil) and to eat it like a burger topped with avocado, lettuce and tomato.

Does anyone else have any quick and healthy lunch ideas to share?

Jennifer | 3 comments Whole grain tortilla chips with "SW" bramd Santa Fe Recipe beans. So yummy and totally satisfying.

Will Kester | 865 comments I don't do "healthy" but I'm a master of "quick"

I always have a fridge full of leftovers from dinners so making something quick for lunch is easy. I keep tobuli made up in the summer and add cherry tomatoes with toasted whole-grain pita triangles.

Toss a bunch of leftover veggies in a shallow bowl, break two eggs over it, season, add some parmesan cheese, stir and microwave for three minutes; it's a tasty fritata.

L.Y. Levand (lylevand) If you have leftover brown rice and some broccoli you can cook the broccoli in your favorite asian-type sauce and put it over the rice. I love it. I can eat a whole head of broccoli in one sitting that way, lol.
