16 apples, 2 lemons, 4 ounces of sugar, 8 tablespoons of Brandy, 1 pint of whipped double cream, Chocolate shavings or leaves Cut the tops off the apples and core them and hollow out the flesh to use later. Be sure to leave a 1/2 inch shell and rub the apples with the lemons, then put on tray and put in the freezer. Cook the chopped apples with the lemon zest and juice in a pan and 4 tablespoons of water, cook ‘til tender and then add in the sugar and Brandy, cool down then fold the cream in the now cooled puree and put into two containers for an hour, beat mixture then freeze until it is halfway frozen. Add the mixture to the apples, put apples in a freezer bag and freeze, remove for one half of an hour, then be sure to add the chocolate before serving.

Another Way: For the kiddies and those of you who do not drink!

Four and a half pounds of apples, three cups of water, two and a quarter cups of sugar, one and a half teaspoons of lemon peel.

Combine the apples, water and sugar in a pot and bring to a boil, then simmer until the apples soften. Add to food processor and puree, add in lemon. Pour onto three nine-inch metal pans and freeze until just firm enough to remove...add once more to the food processor until fluffy. Pack in tightly sealed containers and freeze until needed.

It is/they both are, but they do take a little bit of work, BUT, are worth making!

Fun to do with the kiddies!
