Hi, everyone. I'll post the recipe when I get home, but wanted to let you know I've added a kid's cookbook called "What's Cooking" to the our book listing because it has the best ratatouille recipe I've ever used (each cookbook shows a different one, and this particular one is easy and tasty).

I can't wait! If you find any great kid-friendly recipes, please post them as well because I babysit a lot and it is much easier to keep on eye on the kiddies if they are helping prepare lunch, instead of running around the house screaming. ;)
Here is the ratatouille recipe. This is something that your kids can help make if you chop the veggies.What you need:
1 large eggplant, cubed
1/4 to 1/3 cup olive oil
1 onion thinly sliced
1 red or green pepper, chopped (I prefer red)
2 to 4 crushed garlic cloves
4 small zucchini, chopped
4 tomatoes, chopped
Salt and pepper to taste
1/3 cup chopped fresh basil
Parmesan cheese
What you'll do:
1. Salt the eggplant, drain in a colander for 1 hour, and pat dry. Heat half of the oil in a large saucepan and briefly saute the eggplant until brown, then add the onion and pepper. Next, add the garlic, zucchini and tomatoes. Cook until a soft stew has formed, about 15 to 30 minutes.
2. Add the salt, pepper and basil. Sprinkle with the cheese and serve. You can freeze leftovers. Serves 4
(This French Mediterranean stew is meant to be served over rice. In our house, we like it as a side dish as well.)
