You'll need
Roughly a pound of frozen spinach (I buy it fresh, wash it very well, and deep freeze it in 1 pound packages- about 4 pounds of fresh spinach give 3 packages - the store bought frozen version will do nicely at a pinch)
A cup of white rice, washed
A medium onion chopped
Roughly 1/3 of a cup olive oil
2 tablespoons of dill chopped
Salt to taste
3 cups of hot water
I usually take the frozen spinach and put it in the pan I'm going to use together with the oil, onion and salt and let it thaw for about an hour before I actually cook this but you can speed the process by just turning on the heat under the pan to low and stirring the spinach arount till thawed. (If you start with fresh spinach you have to sautee it until it's tender) When the spinach is thawed I turn on the heat on high and stir until the onion gets translucent. Then I add the rice and dill and keep stirring while gradually adding the water. I let it cook in a covered pot on low heat for about 10 minutes or until the rice absorbs all the liquid. You might want to keep an eye on it the first time you make it since rice has a tendency to stick to the pot! After you find out the right time for your kitchen range it's very easy to make
I serve it with some lemon juice on top of it and my husband like a bit of olive oil drizzled on it too.
