Tammy (tammymerlot) | 16 comments Stole this recipe from my neighbor. Seriously! She wouldn't share and I got tired of bugging her! (All in good humor, of course.) But if you try the recipe, you'll understand why I had to have it. =)

1 1/3 c. oil
4 large eggs
1 c. pumpkin*
2 1/4 c. flour
2 c. gran. sugar
2 boxes instant coconut pudding
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

Mix oil, egges and pumpkin; combine remaining ingredients and add to pumpkin mixture. Add to greased mini-loaves (6). Bake at 325 - 1 hour and 10 min. for 2 loaves.

Check the center - hard to get the center done. I tried regular loaf pans, but it just doesn't work as well. Very moist bread. Well worth the effort!

*Hint - make 9 mini-loaves (29 oz. can of pumpkin is 3 cups)

Lisa Hickman (lbhick) I'll have to give this a try when my son comes home. We are both lovers of pumpkin bread and this sounds like a wonderful variation!
