Boil a cup and a tablespoon of water, add ½ cup plus a little more of smooth peanut butter, stir with wooden spoon until dissolved...just before you remove from heat, add 1 cup of minute rice and stir a few times before removing it from the heat, placing it in a cold water bath in the sink...
Add one large beaten egg to the now cooled mixture and mix well...put in refrigerator for an hour...divide the mix into 4 or 5 equal parts, roll in a ball, then form ‘chop-like’ shapes with them...place them on a greased baking sheet and bake at 375 degrees for 10 minutes on each side...Enjoy!
