I'm probably being really dense. How do you earn more than 7 points, e.g, one for a book read on each of the continents?

Their not points. Just how many books you are willing to read. You can read bronze which would be 7 book (one on each continent, or Silver is ten books, on of each continent and then 3 extra books which could be 2 more books that take place in Asia or wherever etc. Hope I answered your question.
