I like fantasy, but I agree with you that the quest to be the next high concept writer can make things become stale. But I'll read almost anything. I'm not crazy about dystopian, but I like historical fiction and contemporary realism. I really love books that make you think about them after you've closed it. I think that's why I love a lot of classics. Years ago, I read Jude the Obscure and it makes you think so much. So last winter, I taught it in my Intro to Classics class and my kids loved it, too, because there is so much to think about with it. Hardy loves to use juxtaposition to consider a topic, and so he does a lot of that. I wondered if I'd still find it interesting because it had been a while since I read it, but it was still thought provoking. I know that sometimes people love a book that is just kind of predictable and fluffy, but I feel like, with all the books in the world and so little time to read, I really want a book to be beautiful and make me think.
