I'm interested in finding a book which has Amsterdam as its principle setting. Something gothic or decadent, after the style of Bruges-La-Morte or the Prague of Gustav Meyrink. Can anybody recommend a suitable work?

Well, it turns out that I can answer my own question, as Meyrink's The Green Face is set in Amsterdam. As I've read this book, it's clear the setting didn't make so great an impression on me as did Prague in The Golem.
Interesting. What made you decide to wanna read a book with a gothic city in Amsterdam? It sounds really intriguing.
I had a trip planned to Amsterdam and wanted to feel some of its atmosphere first. As it turned out, visiting Anne Frank's House and having that vicarious experience of the Nazi occupation was horror enough. Thankfully, there was also the Van Gogh Museum as a restorative, and it is, in any event, a beautiful city.
