Moorcock is the king of that. I'd highly recommend "The Swords Trilogy" which you can find used for cheap. Any of these three: "The Eternal Champion/The Silver Warriors/The Jewel in the Skull" is also a good intro to Moorcock. Save "Elric" books for later.
Paul Melko's book The Walls of the Universe does this. There's a sequel, Broken Universe.I seem to recall that the book Wildside tells a somewhat similar story, but the details are hazy.
David Brin's The Practice Effect is much more straightforward Portal Fantasy, like Narnia, Oz, etc., where the main character goes to another universe where the rules of physics are different but they can be affected by one's behavior.
I tend to think of Elizabeth Willey's fantasies as "what Amber might be like if the Amberites were not quite so dysfunctional a family."
Doesn't Diana Wynne Jones have one of these? If you don't know, her books are, iiuc, creative light fantasies, often marketed to Juvenile and YA, but they have lots of hard-core adult fans too.(I keep getting recommendations from my friends to read her work, but something about it doesn't quite mesh for me so I've not actually finished any so I can't give you more clear advice.)
Heinlein's "The Number of the Beast" is a classic and one of my favorites, although it helps if you've read some of his earlier books, particularly "The Moon is a Harsh Mistress" and "Time Enough for Love".

Thank you! They're lovely if you like books like Narnia.
Dark Matter is a good example following quantum physics of multiple universes. It's a good fast-moving sci-fi thriller.

(I would prefer stuff like the cradle series where the main character starts off weak and gets stronger as well)
