[ SPOILERS ] The Ending {some questions}

Although I loved the book, I was confused by the ending. I read the book in one sitting, so maybe that was the reason why I missed some things. I would go back to re-read the book for answers, but I returned it to the friend who lent it to me.
Perhaps a kind soul on GoodReads might be able to enlighten me:
1) Was the Great Uncommon Good REALLY the potato sack? If yes, why hasn't Ms Jennifer Bell mentioned it somewhere before in the beginning of the adventure? It felt too sudden and random.
2) What was the deal with the hidden bells at Ethel's? (the ones that moved whenever Ivy said "Great Uncommon Good" )

The bag was mentioned before, I think ivy tripped over it when they were running away and they said something about their grandma always growing potato’s in it.
Not sure about the bells, they were tortured to reveal the story but not sure why they were then stuffed into a wall. That all seemed a bit weird and just rammed in to move the plot along
