My first real slow burn, and still among my faves is Lead. Rock star romance with a recovering addict lead singer and his assistant/sober companion. It's the third in the series and can standalone, but the two previous books are also pretty great (the following one you can skip though, it was meh).
That's all I can think of right now. I really should have some trope shelves for my books. :/

The Outsider
I read this one recently, and I think it’s a 4.5-star read. Interesting late 1800s Montana setting.
Not an inspirational book but heavy on religion since heroine belongs to an offshoot of Amish-like religion (it's never mentioned which exactly).

If you like new adult and haven't read her, Tammara Webber's books are slow burn too. Easy is amazing (tw for sexual assault)
If you like westerns, I think Jo Goodman is a master of slow burn romance and she doesn't shy away from tough topics. Forever In My Heart is one of my favorites (it needs a tw for noncon/rape though)
And one of my absolute favorite romances of all time is Wild at Heart by Patricia Gaffney. It's kind of George of the Jungle ish but set in the late 1800's in the Chicago/suburbs. It's super sweet and a little melancholy.

I'd agree about Mariana Zapata being the queen of the slow burn romance.
A couple of Julie James' would count: Practice Makes Perfect and Just the Sexiest Man Alive

Rachel Higginson's The Opposite of You, Alessandra Torre's Love in Lingerie I'd say these are slow burn, maybe less "burn" than MZ but still good.
