These two I would not call "genre fiction," as they are considered literary fiction. But they are both set in the west so could be considered "western fiction."

Zane Grey and Louis L'Amour are two authors that are generally considered "must reads" for those interested in reading Westerns.
The Sisters Brothers by Patrick DeWitt is a fairly recent one but I really enjoyed it. Like a book version of a Cohen brothers film.
