I read it as a kid, some 20-ish years ago (edit: more like 25 or so, now I think about it. I'd have been somewhere between 6th and 8th grade I guess, so somwhere around 1990-1993, and the book was old then. Pretty sure my dad got it for me).The genre was what I guess you'd call YA, but older, in the same vein as Jim Kjelgaard and the like, more or less. Call of the Wild, Kavik the Wolf Dog, that kind of thing, but with a little bit of Hatchet thrown in. I don't think there was actually a dog in this one.

Don't remember the author's gender, but I suspect it was male.

Don't remember what the cover looked like, but pretty sure it was paperback.
I *think* I remember they were stuck there because of a plane crash, and one of them was injured. I remember one line near the end where one of the guys says if he ever gets back to civilization and goes to a restaurant he's going to make them burn the meat black on the outside (because that's how it turned out when they finally caught something and he'd never tasted anything so good).

I remember there were two guys trapped in a completely untouched part of the bush, where the animals had basically never even seen humans, and they almost got killed by an albino moose.
They had to build a raft and float out through a ravine, and they didn't make it the first couple times until they figured out that the water was higher in the afternoon because of the snowmelt.
