Beyond: the Queer Sci-Fi & Fantasy Comic AnthologyMoonshot: The Indigenous Comics Collection, Volume 1
Drawing the Line: Indian Women Fight Back!
Death Saves: Fallen Heroes of the Kitchen Table
Chainmail Bikini: The Anthology of Women Gamers
Love Is Love: A Comic Book Anthology to Benefit the Survivors of the Orlando Pulse Shooting
Where We Live: Las Vegas Shooting Benefit Anthology
I chose Sleepwalk and Other Stories based on the synopsis. This comic is really fun and cute Mouse Guard: Legends of the Guard, Vol. 1. It's about adventurers telling stories in a bar. The characters are mice, but the stories themselves are in a relatively serious tone. The best story has the storyteller's tab erased.
A few more for the pile:
Black Crown Omnibus Vol. 1
DC New 52 Villains Omnibus
Before Watchmen Omnibus
Trickster: Native American Tales, A Graphic Collection
Now: The New Comics Anthology #5
Creepy Archives, Vol. 1
DC also publishes 'Celebration' collections for various characters that collect different stories from throughout their history.
Wonder Woman: A Celebration of 75 Years
The Joker: A Celebration of 75 Years
The Flash: A Celebration of 75 Years
And Dark Horse publishes a number of omnibus related to Alien and Predator, with many of the stories written by multiple authors:
Aliens Omnibus, Vol. 1
Predator Omnibus, Volume 1
Black Crown Omnibus Vol. 1

I thought A Contract With God and Other Tenement Stories would work here, but it's written by the same author. Still it features independent stories, so if anyone is willing to be more lenient on the 'multiple authors/creative teams' part, then it's a good choice. Hell, it's a good choice just because it well written.
