The other day I found some expired bottled Frappucinos in a cupboard that I had totally forgotten about. I'm a little nervous about drinking them, but I'll give it a shot. Waste not, want not.
I don't eat everything that's expired. I just threw out a frozen Cornish game hen with an expiration date in 2009.
Though I did wonder as I tossed it, is this still good? I do hate to waste food.

2009? Probably freezer burnt. But if you thaw it and sniff it and it's not gross, then it's probably still ok to consume. Not that I would.
Sorting out expired canned goods is a huge drain on volunteer time at food banks. This from experience. A lot of people think it's okay to give away expired stuff. Poor people shouldn't expect to have good food, I guess.

But canned food doesn't really go bad (unless it's severely dented or bulging). It's not a good policy to throw out cans past their "use by" date at food banks.

What about leftovers? It's usually two days for me. If there is still some cold roast chicken left after that time I will then freeze the remains to make stock. That's what I tell myself anyway. If there is cooked rice left over, and not consumed the following day then I will throw it away.
Leftovers, it depends. For me I probably won't eat it after the 3rd day. Up to 3 days it's usually okay. Cold roast chicken is definitely still good up to 3-4 days. It's the combination dishes (meat and vegetable, or meat/vegetable/rice) that go off sooner than meat by itself, because you have fluids leaching out from the vegetables and things starting to go slimy.
I hate throwing away food, too. The nose test is pretty reliable for most things, although I try to eat leftovers within three days. Throwing things away just because they're past the "use by" date is wasteful. Companies are being overly careful in order to protect themselves. I still use some Velveeta slices that are a year old. I'm pretty sure they're good forever :-)
I’d been saving a bag of pretzels for that special “perfect moment”, which finally occurred yesterday. I opened the bag and popped one in and. . . stale sawdust? Checked out the date on the bag, and it read best by Oct. 2017. If you can think of a good descriptor for what the tasted like, please bring it on.

Di-methyl sulfoxide combined with mammal protein has a garlic smell. DMSO while not terribly toxic, though carcinogenic, can carry in solution many other nastier things!

Last week I cooked with some dried pasta that had a use-by date of Jan. 2020. It was absolutely fine. Good, in fact.
Pasta should be good for years. It's dried. What could go wrong if it's stored correctly? Expired milk has to pass the smell, consistency, and taste test. If it does, I'm using it. And I always use eggs a couple of weeks past the sell by date after a smell test. I have a thing about throwing food away.

I am cautious around tomato-based products. Occasionally, I will taste some of Dr. Paschen's homemade salsa and it fizzes on my tongue. Throw that stuff out. It can make you pretty sick.

Open it and taste a small amount. If it tastes off or is fizzy like Cynthia said, throw out. But if it tastes OK it probably is fine.
Don't forget that "Best if used by" just means best if used by, it doesn't mean it went bad. Also their estimates are overly conservative to avoid getting sued.

I have been drinking some Starbucks Via instant coffee that expired in April 2017, and it tastes fine. I'm sure it would taste even better if it were a dark roast, which I prefer, but it's Colombia.
Still using a few Chapsticks that have expiration dates of 2010 and 2011. This is because I have so many Chapsticks and other lip balms, I have a hard time using them up. They still work.
My Tom's of Maine long-lasting deodorant expired in Feb. 2019 and it still works great. It really is long-lasting!
Partly inspired by this man who ate expired food for a year; although, I've been using expired products for a long time.
