Villains by Necessity has a good thief.
Anne Logston's Shadow series is good too. Shadow Shadow Series Book 1 but I will freely admit to a liking for elves as master thieves.
Swan's Braid and Other Tales of Terizan by Tanya Huff is a collection of short stories about a thief.

I know it's a bit tacky to mention my own books (especially since this one's not out until January 2015!) but The Second Lie has an immortal Viking conman and art thief hero. Stig is very Remington Steele, or if you know the Warren Zevon song "Mr. Bad Example," that's him. In his fifteen centuries of life, he's been a bad boy artist/thief many times, including being the artist Caravaggio during the Renaissance. At the start of The Second Lie, he's running a big wine fraud in London, selling so-so bottles relabeled as rare wines worth ten thousand dollars or more each. The heroine is, naturally, a California wine merchant who discovers his scam. It's paranormal romantic suspense. And there are large venomous reptiles!
