Does anyone have a good recipe for scalloped potatoes with ground sausage? I'd prefer a crockpot recipe but that's not a 'must have'
OMG - that sounds AWESOME, Jen. If hubs weren't on such a carb strike, I'd totally make that. I have a crock pot recipe book. Lemme look in that.
This sounds like a really good one that doens't use condensed canned soup (which I hate). It calls for ham, but I substitue pork or bacon for ham all the time. 6 cups raw potatoes, but into small cubes
1 medium onion, minced
1 tsp. salt
1/2 lb. cooked ham, cubed (or cooked sausage, crumbled)
4 T butter
4 T flour
1 tsp. salt
2 C milk
1 1/2 C shredded cheddar cheese
1. Layer potatoes, onion, 1 tsp salt and meat into slow cooker.
2. Melt butter in saucepan. Stir in flour and 1 tsp. salt. Cook until bubbly. Gradually add milk. Cook until smooth and thickened. Add cheese and stir until melted. Pour over potato-meat mixture, stirring lightly.
3. Cover. Cook on low 6-7 hours, or high 3-4 hours.

I know! I suggested it to hubby for post vaca and pre going back to work...that way I can rope him into helping :-p
