See What I Have Done has a bird on the cover and is a fictional retelling of Lizzie Borden. It’s weird, but interesting.
Two that I didn't see in the above posts on a quick skim: Sing, Unburied, Sing" and Willful Machines.
If I’m not reading I’m probably be out reading. And I suggested something similar over at ATY but it didn’t make it in. So this prompt makes me happy. Now just have to decide what to read.

I'm going to check out The Tethered Mage, which is the first in a trilogy - all with birds on the cover!

Although I think for many of us that's half the fun, doing the planning when the new list comes out!
I'm thinking about reading The Crow Road by Iain Banks.
Or maybe A Confederacy of Dunces. It's been on my TBR shelf forever.

Recommendations I haven't seen yet (but have read and loved):
I've got quite a few bird covers on my TBR list, but I'm most likely going to take this as an excuse to finally read Jonathan Strange & Mr Norrell. (I bought it a while back and it's been sitting on my shelf waiting patiently for so long!)
For those who like mysteries, the “Meg Langslow” series by Donna Andrews all have birds on the covers, and many of the titles also have puns (such as Cockatiels at Seven, Owls Well That Ends Well and Duck the Halls.)The first book in the series is Murder With Peacocks.
