I read this around 1975. I want to say it's in one of the Alfred Hitchcock collections, but haven't found it in one yet. It was about a woman who for some reason had to live in a haunted house as the assistant to another woman. I don't recall why she had to live there. I remember weird snippets of dialogue, about how in the summer it wasn't so bad to live there, but in the winter, with the long nights, it was. One apparition a person saw was a small boy with blood on his face. The employer liked her chops to be "red right through" when the main character prepared them.

“The Triumph of Death,” by H. Russell Wakefield, in Alfred Hitchcock's Supernatural Tales of Terror and Suspense, I’m guessing.
