CD  | 1577 comments The Holidays are in full swing and with it comes both traditional and 'experimental' cookery.

Traditional meals like the many turkey dinners have become overwhelming and thus I like alternatives. There was no Turkey served in my home on Thanksgiving. We did Ham. The 'special' dish this year (read special as first time/experiment) was a roast chestnut and brussel sprout casseroule.

Officially it was Castagne Con Cacolini Al Forno.

And the 'tie-in' to books is that the recipe was from the behemoth of cookbooks known as The Silver Spoon.

So, what non-traditional dish or non Turkey meal did you celebrate with this year?

[ Turkey Farmers don't worry. I've had Turkey thrice in the two weeks leading up to T-day. So I was just not ready for more, yet. ]

Great news for a turkey somewhere. My christmas gift to our winged friends.

CD  | 1577 comments I have a friend who is soliciting vegie recipes. His goal is for health reasons to avoid extra salt and fat.

Skip the Tofu. He tried that before and had to go get fast food to get the taste out of his mouth. I've recommended vegan chili or enchiladas.

I'm considering beef stew for Christmas or New Years. With wine. Lots of wine. Shallots. Mushrooms. Etc.

Our summer Christmas dinner is usually cold ham, prawns and chicken and lots of vegetables and salads. Drinks will be wine and cold beer.

Tofu can be tasty and I like it. The worst Tofu I have tasted was in Cairns from a Chinese restaurant serving a few Thai style dishes. There was something about the texture of that Tofu that wasn't quite right.

I find with a vegetarian menu it is important to make it really tasty and so the skilled use of herbs and spices is a good idea. I think your choices of Chilli or enchilada are spot on.
