Is it the Fighting Fantasy series? Several of them involve mazes, although I can't find one about cannibalism. They do require dice.

OK I'm probably not helping here, but I'll throw this out there.There was a fantasy game series called The Fantasy Trip ( https://en.wikipedia.org/wiki/The_Fan... ) by Steve Jackson Games. There were two main component games, Melee and Wizard. These spawned a series of sort-of CYOA modular games, and that's what made me think of this in your description.

Thank you for the Blood Sword suggestion, unfortunately it isn’t those. It’s a singular named character as protagonist. Some type of warrior, I cannot recall the name.
Is it the Lone Wolf series (Rob’s suggestion, looks promising) or the Fantasy Trip game (Titus’s suggestion)?

Fantasy based, very D&D type (although not under the D&D brand either). The protagonist was a warrior with (I think) some magic. I think his name started with a T but I’m not sure. It was an ogling story arc from oil to book, and I think there were about five or so in the series.
Lots of black on the covers, paperback. I would have read these at least 30 years ago.
The plot lines outlines the adventurer teaming up with people and creatures. One plot involved a deadly maze to get through. One involved having to deal with an insane kingdom where it turned out cannibalism had flourished.
The artwork was fairly dark. Black covers if I remember correctly. Heavy subject material.
