      I've been on a bagel kick, lol! My store has a limit of one bag per person though (4 bagels in a bag) so I'm going to run out, and am not going to the store for 2 weeks.
Tonight I'm looking forward to making something similar to schnitzel with mushroom sauce, or some pesto noodles.
Last night I FINALLY opened up one of the vacuum sealed frozen foods from my freezer - green curry with pineapple, and it was deeelicious. Not sure why I waited so long!

 I make things for myself, and a typical sample would have whole grain noodles, with hummus, beans, or lentils, cabbage and other vegetables on hand, cashews, pumpkin seeds, garlic, ginger, turmeric, cumin, parsley, and such for seasonings, and often with salsa.

     In my current living situation (ever seen Hoarders?) with my hostile ex, I stay in my room subsisting mostly on Oreos, now that the potato chips are gone. Luckily, he's also vegan and newly interested in making tacos, which are delicious. Corn tortillas, chayote, onions, bell peppers, and a wonderful creamy sauce made from a couple different kinds of somewhat spicy peppers.

      I tried something new yesterday and it turned out delicious. You cut potatoes up into large chunks – 1-2 inches across maybe? Then you boil in them in water with a couple of tablespoons of kosher salt and a teaspoon of baking soda until they are just tender enough for a night to go in easily. Then you toss them with some oil and herbs like rosemary and chopped garlic - they will seems like potatoes coated in mashed potatoes. Then you roast them in the oven. 
They get really crispy. Yum!! I will definitely make again.

It being 2020 with coronavirus looming large, many of us are cooking and baking more while at home, so perhaps you're getting creative or trying some recipes you haven't tried, or just eating whatever the heck you want!
