What the Moon Saw by Laura Resau is set in Mexico. The Wild Book by Juan Villoro and translated by Lawrence Schimel is also set in Mexico. Sugarbread by Bali Kaur Jaswal is set in Singapore.
I have been wanting to read They All Fall Down by Rachel Howzell Hall which is set on a island in Mexico.

For an Island novel, I nominate Love, Anger, Madness: A Haitian Trilogy by Marie Vieux-Chauvet, a trio of novellas that take place in Haiti.
