It's probba;y not exactly what you want, but one of my childhood favorites is by Jules Verne, about a group of students marooned on an island in the South Pacific: "The Two Years Holiday" It might be hard to found though. If you like science-fiction, I really enjoyed Dark Eden by Chris Becket, about the survivors of a crash on an alien planet.
Beauty queens by Libby bray is really more of a satire ish castaway story, but it's hilarious and I loved it.
On the Island by Tracey Garvis-Graves.I think there is more than one book but I read only this one so far. It's the plane crash - end up on an island theme. I enjoyed it's story of dealing long term with what you are presented.
I know of a couple of intentional castaway books. Meaning the people put themselves on an island on purpose and the books are the account of that.
I haven't read them, but here they are:
Castaway
by Lucy Irvine
and
An Island to Oneself: The Story of Six Years on a Desert Island
by Tom Neale
