in my note app, I like to just put my thoughts down as I read then I'd form a review from that in the app instead of just doing it when you finished reading on goodreads
I start writing bits of my reviews as I read, usually from about 20% into the book. Taking notes of all the things you like or dislike (be it a character, writing style, etc) is helpful when you‘ve finished reading and I’ve found it’s less overwhelming that way.
My review are usually long (except my old one's which are terrible, and short :) ) I try writing with a format, so just some thing's I know I want to add to my review, and then as I do that, I add some extra things, I want to add.

I agree with everything that all of you said! The only thing I have to add is it's good to start off your review with content warnings and trigger warnings if a book needs them
a good thing to do is to structure it. if you struggle to make your reviews long enough, then try this. a cool quote from the book
open with a paragraph about your overall opinion. did you like the book? if it’s in a series how did it compare to the other books in the series? would you recommend it? here’s also where you might want to put the books trigger warnings, and a spoiler warning if the review contains spoilers.

write about the plot here! do a summary of the book, then a paragraph or two about your opinion of the PLOT. did you think it lacked structure? was it paced well? did you want to put it down? were you invested in the plot? we’re there any shocking twists?
quote
now write about the prose. this will be a pretty short section. did you like the style it was written in? did the author use too many adjectives? did it feel like a poem? don’t worry if this section is one or two sentences.
quote
now you should write about the characters. try to do a few sentences for each one. what did you think of them? we’re you invested in their lives? did you empathise with them? did they annoy you at any point?

and lastly, you can write about the romance here (if there was any.) if not you could write about the world building or any representation of marginalised groups. did you like the romance? was it cute? did it feel rushed and not very well thought out? was it toxic or healthy?

time for a conclusion! give another overall judgement then say something like “see you next time” et cetera. hope this helps!
