I recently dipped my toes into progression fantasy with Sarah Lin's The Brightest Shadow which turned out to be an excellent book. It's on the longer side and there's a lot to focus given to the characters building up their skill, but if you give it the time and patience it required you'll grow to love the characters and you'll find a very immersive well-built world.
