I've read the first 6 of these

E. R. Eddison - The Worm Ourorobos (1922)
(not really) Demons versus (not really) Witches in a book that was an inspiration to Tolkein
Ursula K. Le Guin - A Wizard of Earthsea (1968)
Because
Terry Pratchett - Guards! Guards! (1989)
Got to have a Terry Pratchett. This has a hidden Prince, Wizards, Dwarves and a Dragon.
Terry Brooks - The Sword of Shannara (1977)
The first half is a disgracefully poor scene-by-scene rewrite of Fellowship of the Rings. It gets better, later, when he finds his own voice and plot
C.S. Lewis - Out of the Silent Planet (1938)
Friend of Tolkein and author of the Narnia books. This is the first of his Science Fiction Trilogy and based on Mars.
Martin Scott - Thraxas (1999)
Winner of the 2000 World Fantasy Award. There's Orcs, Elves, Drugged-up Magicians and a big-boned gumshoe with a fondness for beer, I love this series
S.M. Stirling - Dies the Fire (2004)
This is apparently inspired by LoTR but I'm not sure from the desciption
Pat Murphy -There and Back Again (1999)
A SciFi re-telling of the Hobbit
The Harvard Lampoon - Bored of the Rings: A Parody of J.R.R. Tolkien's Lord of the Rings (1969)
Apparently not a great book but an quck parody by some of the guys behind Animal House and Caddyshack
Adam Roberts - The Soddit: Or, Let's Cash in Again (2003)
I found this parody of the Hobbit then went down a rabbit hole with this SciFi Author
