My favorite is Phillip Gulley's Home to Harmony series. It is the simplicity of his writing and how small things are important to life.

The classic Christy is one of my favorite reads, ever. It is not really a series, but I really enjoyed it.
Christian Romance is one of my favorite "escape" read genres. My favorite classic author of this genre is Dee Henderson, but her O'Malley series, which is community heroes focused, is very simplistic, so, I recommend her Uncommon Heroes series, which has a military theme. I've enjoyed watching her books gain more depth as the genre has been allowing more complicated plots.
Sarah Eden's "Longing for Home" and "Longing for Home, Hope Springs" are good; better than her other books.
Don't really have a series I've liked, but do Like Melody Carlson's books. I liked Edenbrooke by Julie Donaldson (which is in a series), but I haven't read the others yet.
I like Karen Witemeyer's books. They're Christian romance, but they're not pushy about the Christian part. Plus they have AWESOME covers. My favorite cover is "Head in the Clouds".
