Carmilla by Sheridan Le Fanu would be the obvious answer. Also Our Share Of Night by Mariana Enriquez has a protagonist who’s a bisexual witch.
My book club is currently reading You're Not Supposed to Die Tonight which features a sapphic couple! If you love the queer horror specific genre, I would also consider looking up the group Eerie Inklings. :)
