The Adventures of Huckleberry Finn by Mark Twain, and I am guessing also James by Percival Everett. Of course, they were not in a canoe, but definitely paddling was involved.

I'm reading Lord Jim by Joseph Conrad for opening ceremonies, but discovered that it also has a canoe trip, and it fits both Option A and Option B.
