Brooke (bdzimmy) | 4 comments Since I didn't see a canning or preserves folder, I hope it's okay that I post this here! I'm all about canning, though I don't do a lot, because I have to admit that I'm kind of lazy! During canning season, my Bell Canning/Preserving book is my best friend!!

Anyway, I was watching "Goodeats" on Food Network tonight & Alton talked about preserving peaches without all the mushiness of canning them! I think this is fantastic & I hope someone else does too!!

He said to take:
1 1/2 pounds of peaches (cut up, pitted)
one 500mg Vitamin C tablet dissolved in a little glass of water
3/4 cups sugar

After mixing the dissolved Vit C and the peaches, then adding & mixing in the sugar, place the peaches in freezer bags & stick in the freezer (easiest if you lay them out flat).

How easy is that!!! =)

Brooke (bdzimmy) | 4 comments I really think you can can any time of the year, but most of the stuff that I can.....beans, tomatoes, salsa, fruit, etc.....is in the fall (usually September). However, we always have lots of garden produce, especially tomatoes, so I usually get tired of canning them, so I freeze them & can stuff in the spring!

Brooke (bdzimmy) | 4 comments For us, it does.....fresh veges are expensive!! Don't quote me, but I read somewhere that you can save up to $700 per season, by having a garden....or something like that!!! Anyway, it saves us money, that's for sure! It's just my husband & I, but we try our best to eat healthy, so this helps a LOT! I even started a compost pile last year, so we don't have to use chemical fertilizers anymore!!
