Well this isn't really a "level" but... I found Ganondorf in Twilight Princess to be surprisingly easy. I think it's because he's just so slow (and he is interestingly facinated by fishing poles.).

Cool! Bosses a lot of times seem to move at the speed of a snail...

I'm interestingly fascinated by fishing poles sometimes too...but only when there's a fish on the line...:O
