Not many book adaptations in May -- at least I didn't find many - only three so far!

1. The Best Exotic Marigold Hotel by Deborah Moggach by Deborah Moggach (Marigold Hotel in US comes out in May 4th, whilst it had already done a round around the Europe...)

2. Hick by Andrea Portes by Andrea Portes (Hick hits the theatres May 11th)

3. What to Expect When You're Expecting by Heidi Murkoff by Heidi Murkoff (a comedy What to Expect When You're Expecting coming out in May 18th is just inspired by the book, it itself isn't quite adaptable into the movie unless it's a documentary one ;)

Maybe there are more movie adaptations that just won't go into the theaters but directly to DVD. If you find some, feel free to post here your findings.

But, there are a few other exciting movies going in wide release in May, like The Avengers and Dark Shadows :)
