Me too and I've never made apple pie. This was a painless recipe and SO good. Would have been even sweeter with ice cream :)
Hayley - thank you! My grandkids will love these little jewels. Apple pie is a favorite and cupcakes a delight for them. This recipe appears to join the two for a match made in heaven!

Yum! Fall and the onset of cold weather always makes me feel like baking, which I can actually do again, since my landlords got me a new oven -- old one incinerated a pan of brownies in under 30 minutes...it was a good thing I went to check them before they were supposed to be done. I might have to try these when we go apple picking.
It's just me and my hubby, and I love making pies, but for 2 people, they're just too much - they go bad before we finish (yes, it IS possible, LOL!). I was in a kitchen store a couple months ago and found little personal-size pie tins. 2 tins for $3. O M G, GREAT find!! I've made peach pie and apple pie, and the best part is that it only takes 1 or 2 peaches/apples per pie...MUCH less prep time! Today, I'm going to make chocolate pudding pie with graham cracker crust. YUM!!

I made this recipe one evening for my kiddo & fiance, and myself of course and we just couldn't get ENOUGH! This recipe calls for a batch of 24, but you can always half it (I did, I only made 12).
