That's so many stories. You should put them all in a book. I am currently writing my first debut novel that will become a trilogy. I am also working on a novella and prequel to two different books. I have a busy life with college, work, and family that time for writing is limited. I am releasing my first book in 2013 as well as at least two if not more novellas about book related characters. Its a big year for me. I'm also starting a blog and twitter page for all of my fans.
My favorite book? I would have to say Revelations. It is the most interesting and exciting part of the bible of what is to come. It is my favorite out of the Catholic bible, anyways.
My favorite would have to be Revelations, or Genesis. I guess my two favorite are the most symbolic, and are some what oppisites. :D
In other bibles that are not Catholic condoned, I quite enjoy the book of Marie. You would know her as the prositiute, Marie M. It is her life written by her hand about how the love of Jesus transformed her life, but it also talks about how her family forced her into prostitution to pay for money to eat and they would get drunk off of her prostitute money. Jesus gave her the courage to leave her family and try to lead a better life for herself. It become her mission to try to bring other prostitutes out of the job and try to help them leave. It was very inspiring. I wish the Catholics would add that woman empowerment story to their bible.
Mary, the Moher of God, or Mary M?Either one, I wish there were more stories about females. There are only about 100 significant moments in the bible for women.
In biblical times, it was a patriarchal society, so it is not too surprising that women weren't mentioned more frequently, however, there are quite a few women mentioned in the bible. In my book, Fools, Liars, Cheaters & Other Bible Heroes, I made a conscious decision to include an equal number of women and men from the bible: 14 of each. Some are well known, some are not, but just like people today, we can be significant without being famous.
Yes, another Saint I think is ill mentioned is Saint Joseph, the foster father of God. Jesus wouldn't have existed if Joseph didn't: Accept Marry when she was pregnant before marrage (at the times, Mary would have been killed and Joseph would've been punished), or if he wasn't there to get Jesus, and Mary out of Bethlehem.

They didn't talk about Mary much more than they talked about him. His main part in the Bible is Jesus' birth, so the writer just included those important parts pertaining to their escape to Egypt, Joseph's dreams, etc.

In case you're wondering what's the difference between Catholics and pro-Catholics, I can give you an answer to this question:
Pro-Catholics are people who like the Catholic Church, but not necessarily are they Catholic.
Catholics are people who follow and practice the Catholic Church and are also baptized in the Catholic Church.
