Winemakers sometimes allow a second bacterial fermentation in the new wine. The baterium L oenos consumes the wine's malic acid and converts it into lactic acid, less strong and sour. This "malolactic" fermentation reduces the tartness of the wine and produces buttery diacetyl. (A relative of this bacterium contributes the same compound to cultured butter itself!) - On Food and Cooking

"And while it is true that most of us unthinkingly place the authority of science above culture in all matters having to do with our health, that prejudice should at least be examined. The question we need to ask is, Are we better off with these new authorities telling us how to eat than we were with the traditional authorities they supplanted?"

This guy is hilarious. Not because he's trying to be, but because everything he says is so blunt. My sisters keep looking at me like I'm weird because I keep laughing, every 30 seconds, while I'm reading a book about the pros and cons of grades. :P

Read his "Myths of Teaching" and I disagree with about half of them. Does this mean this book will be rough reading?
