The fact that these are essay collections shout the need for a substantial study on Philippine food and culture. I am somehow dissatisfied becase the writings are not that deep and just plain descriptive. Also: I can pick up that it's more on restaurant reviews than speaking of Filipino culture on food alone. It becomes hard to pick up when you're bombarded with new names and addresses without dates and deep context.
