Love the story of the trains in mid Victorian times up the East Coast route from London to Scotland. This was before the days of restaurant cars, so the passengers were allowed 20 minutes only in York to get off and have a lunch break.
Apparently the soup was deliberately served boiling hot so that it would not cool down to drinkable temperature in that time. It was then poured back into the pot for the next lot!
