Loving Chang's approach to life and cooking. Just getting into the story about ssam. A friend and I were planning to make ramen for lunch using his recipe, until we realized that Chang is not messing around and isn't expecting his readers to want to either. Roasting chicken backs for the taré and pork bones for the broth? (Drool) So much respect for this man!!
