I read a lot of gastronomic history books (I’d be a food historian if I had a chance to do it all again) - this contains fine bits of writing such as: “Finding such chickens proved a challenge, though, in the age of Tyson and Perdue, massive high-volume operations whose pen-raised chickens, like San Fernando Valley porn, offered consistency and enormous breasts but little in the way of lasting satisfaction”.
