I am currently working on a rather large piece of cheesecake and a cup of Kenyan coffee. Oh, you meant book! Well, I just finished a book on the breads of Asia and am currently in the research stages for a sequel to the American Table, dealing with American rustic dishes.

I guess the most honest answer would be, I get inspired when I look at my bank account! I do tend to do something different than most people. I hang around bookstores and talk to people who buy cookbooks. I find out what they're into and what they would like. Then I look for an original approach to the subject, which leads to me bothering my publisher until they shut me up with a contract.

Considering I have two new books coming out, Sept. & Oct., I'll take this one at a time. Style & Spice came about because the incredible flavors and dishes of the American Southwest have been ignored. Not only is this one of the most robust of any American cuisines, it is also one of the healthiest. As most scientific studies have recently shown, the herbs and spices used in Southwest cooking are known cancer fighters. As far as The American Table, the idea for this cookbook came about simply because I miss and often times crave the classic dishes from the famed diners, cafes and roadside eateries which at one time dotted our gorgeous American landscape. These truly are the ultimate in comfort foods.
