Dang, that's a tough question. I like the structure of Sci-Fi and the realism; but I also like the freedom and imagination of Fantasy.
If it comes to writing, I probably lean more towards Sci-Fi, because I'm a nerd. I enjoy researching things, like the chemical structure of DNA and dominant and recessive genes.

A variety of ways (depending on my mood). Sometimes I go for a walk to clear my head or get a change of scenery; listening to music can help put me in the 'mood' of my current project; sometimes I power through it and write a place-holder, which is absolute crap, just to get to the more interesting part; and sometimes I simply have to walk away for a bit.
My best/least-favourite method is to think about the problem as I'm going to sleep, because I know that the answer will come to me and I'll have to wake up to write it down. The more tired I am the better this works.
