Hi Nikki. I know you love having veggies be the main portion of your dishes so I was wondering, how do you keep your veggies fresh? I usually go to the grocery store once a week at most, and am living on a very tight budget. I like to use everything I buy, but often find my produce going bad before I can use it. Any suggestions?

Nikki Dinki I totally understand, because I'm always testing new recipes I often find myself with a quarter head of cauliflower or a cup of spinach or just a coup…moreI totally understand, because I'm always testing new recipes I often find myself with a quarter head of cauliflower or a cup of spinach or just a couple baby carrots in my fridge. So that these things don't go to waste I like to have a couple go-to recipes that I can throw whatever leftover veggies I have in to. My favorites are soup, you can saute up all the different vegetables you like and stock and some chicken and you have a great and simple soup. Or a quiche is a great veggies use-up, you can add whatever veggies you have in with the eggs and a little cheese and you've got dinner. Last I love to have smoothies in the morning, and as long as you have some fruit in there too you can add things like cauliflower, carrots, greens and whatever else you have, you won't even notice that the vegetables are in there.
